WHere is a home-style version of a beverage from a new menu. This is a party-sized premix that's bursting with flavours of a Christmas time, making it perfect for hosting a celebration. Any leftover syrup for morning drinks, puddings, or for more rounds of bikinis.
The Bikini Cocktail
Serves 10 people
To make the Citrus Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Premix (makes 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
For the Cordial: Place every items in a saucepan, bring to a light boil, mixing to dissolve. Next, take off the burner allowing it to cool entirely. Transfer into an sealable bottle, seal and refrigerate it in the refrigerator, where it will keep for around a month.
For the Cocktail Base: Mix the specified liquids into a sizeable container, let it rest for 60 minutes, then pass it through best through cheesecloth, so it's fully clarified.
For serving: Add 85ml of the cocktail base into a mixing glass containing ice, and stir gently for about 60 seconds to chill. Pour to a cold coupe glass or equivalent, decorate with a few cranberries and complete it by giving it a light spray of the essential oil over the drink.
